Opalka Tomato is a prized Polish heirloom paste variety with large, pointed, pepper-shaped fruits weighing 5–8 ounces, minimal seeds, and almost no gel — a combination that produces the finest, most concentrated, most deeply flavored tomato paste and sauce of any variety available. The rich, complex flavor with a perfect balance of sweetness and acidity makes Opalka the go-to tomato for serious home preservers and cooks who demand an authentic, deeply flavorful tomato paste, sauce, and pizza base.
