One knife maker fits the handle, hand-finishes the choil and spine, and sharpens the blade before it ever leaves Victor, Idaho. The blade itself is CPM S35VN - more blade for big prep jobs, large squash, full racks, high-volume cutting. All the precision of the 8", extended.
