Fill the form, chill it, peel the liner off, and the sides are smooth. On the square and the heart that includes the corners, which are the bits nobody can get neat by hand. They build up to 8 inches high, so each of them can be a proper tall cake if you want it to be.

How many does a 6" serve?

Roughly, with party slices:
Round: about 12 to 14 at 4 inches high, 24 to 28 at the full 8 inches.
Square: about 16 to 18 at 4 inches, 32 to 36 at 8.
Heart: about 10 to 12 at 4 inches, 20 to 24 at 8.

Isn't a square cake harder?

By hand, yes. Square cakes are the ones people avoid, because you can't get four sharp corners with a scraper no matter how long you stand there. In Frost Form it's the other way round. The form makes the corners, so the square is, if anything, the easier one. The first time you peel a square, your jaw will be on the floor.

Do I need all three?

If you only ever make one shape, no, buy that one. Most people who bake for a family end up needing all three within the year: a round for a birthday, a heart for Valentine's or an anniversary, a square for the one who wants something different. Getting them together is cheaper than buying them one at a time.
