The story behind the name:

Unimpressed by the average restaurant steak knife, chef Yves Charles set out to create a new standard in slicing. Surrounded by friends and fueled by a great quantity wine, Chef Charles conceived a table knife inspired by his favorite Thiers-made pocket knife, and made from the finest materials available. To commemorate the epiphany, and as an homage to the early-to-market (primeur) wine provided by his friend, Auvergne winemaker Stephane Majeune, he dubbed his first design the "9.47", after the ABV of the young wine from the renowned Domaine Peyra.
