Every good deli pickle is a fermented pickle. Full sours, half sours, garlicky dills. The crunch comes from salt brine and a few days on the counter, and vinegar can’t fake it.
Pack cucumbers into the half-gallon jar, pour in the brine, and set the glass weight on top so everything stays submerged. The airlock lid handles the rest. There’s a black tea bag in the kit because tannins keep pickles crisp. And once you’ve eaten through the first batch, the jar is ready for the next one, or for kraut or kimchi.
