Caramel has a way of going from golden to bitter while you blink. This compact dial thermometer clips right onto the pot and gives you a clear read on exactly where your sugar or oil stands, so you can stop hovering and start trusting the numbers.
The details
This is Escali's 5.5-inch candy and deep fry thermometer, a sturdy stainless steel dial built for the high heat of candy making and frying. The shorter probe makes it a natural fit for saucepans and smaller batches, where a long-stem thermometer can feel like more tool than you need.
The 2.5-inch dial reads from 100°F to 500°F and has the candy stages printed right on the face: jelly, soft ball, firm ball, hard ball, hard crack, caramel, and deep fry. An adjustable marker rotates around the dial so you can set your target temperature before you start and see at a glance when you've arrived.
A stainless steel clip holds it steady on the side of the pot for hands-free monitoring. When you're done, it goes right in the dishwasher.
Why we love it
Use it for
Small-batch caramel sauce, fudge, toffee, and peanut brittle, sugar syrup for marshmallows or Italian meringue, and checking oil temperature for a quick pan of doughnut holes or fritters.
